Brownie-mascarpone-yogurt-dessert with sour cherries

Wondering what to do with “left over” brownies? I am not sure if this can actually happen … ;-) … When preparing this recipe I was looking for an “use” for the cut outs from the star brownies (other than snacking on these bite sized pieces) … but no matter which shape your brownies have, you can use them for this dessert.

Actually this is not even limited to brownies … I am starting to fantasize about apple strudel in this dessert (leave out the sour cherries though), but I guess that is something for another day :-).

Mascarpone yogurt brownie dessert

Brownie mascarpone yogurt dessert BROWNIE-MASCARPONE-CHERRY-CUP

Ingredients (serves 3):
100 g greek yogurt
100 g mascarpone
80 g sour cherries (fresh and pitted, or morello cherries compote, drained)
some brownies, broken into small pieces

Preparation:
1) Combine greek yogurt and mascarpone and beat in a hand mixer for 1-2 minutes until fluffy.
2) Take three glasses or bowls, layer brownie pieces, cherries (I used compote) and yogurt-mascarpone-cream.
3) Serve & enjoy.

If you have a very sweet tooth, try adding some honey or maple sirup to the mascarpone-yogurt cream.

Zutaten (für 3 Portionen):
100 g griechisches Joghurt
100 g Mascarpone
80 g Weichseln (frisch und entkernt oder Schattenmorellen-Kompott, abgetropft)
einige Brownies, in kleine Stücke gebrochen

Zubereitung:
1) Griechisches Joghurt und Mascarpone vermengen und mit dem Handmixer 1-2 Minuten luftig schlagen.
2) In 3 Gläsern oder Schüsseln, Brownies, Weichseln (ich habe Kompott verwendet) und Joghurt-Mascarpone-Creme übereinander schichten.
3) Servieren & geniessen.

Für die Liebhaber des Süssen: wie wäre es mit etwas Honig oder Ahornsirup in der Mascarpone-Joghurt-Creme.
