Sun, where are you? If I look through the window, I just see grey. Outside the wind is a constant companion and the temperatures are somewhere between one and 10 degrees centigrade, depending on the daily mood of our dear weather. But sun, where are you? You have been hiding behind a thick layer of grey clouds for weeks now. Because of you, it does not feel like spring. Even the plants struggle with this “spring”. And so do I.

Carrot muffins CARROT MUFFINS

Ingredients (for 12 muffins)):
2 eggs
100 g sugar
75 ml oil, e.g. sunflower oil
250 g yoghurt
250 g flour
2 tsp baking powder
50 g chopped walnuts
250 g coarsely grated carrots
12 muffins forms
for the decoration:
200 g icing sugar
2 tbsp lemon juice
12 marzipan carrots

Preparation:
1) Preheat the oven to 180 ºC. Grease muffin forms or line with paper cups.
2) Combine eggs, sugar, yoghurt and oil.
3) Stir flour and baking powder into the wet ingredients. Add grated carrots and chopped walnuts.
4) Fill the dough into the form. Bake in the middle of the oven at 180 ºC for 25-30 minutes.
5) Remove muffins from oven and let cool completely.
6) Combine lemon juice and icing sugar to a gooey glaze. Glaze the muffins and decorate with one marzipan carrot each.

Karottenmuffins KAROTTENMUFFINS

Zutaten (ergibt 12 Stück):
2 Eier
100 g Zucker
75 ml Öl, z.B. Sonnenblumenöl
250 g Joghurt
250 g Mehl
2 TL Backpulver
50 g gehackte Walnüsse
250 g grob geraspelte Karotten
12 Muffinformen
für die Deko:
200 g Staubzucker
2 EL Zitronensaft
12 Marzipankarotten

Zubereitung:
1) Backofen auf 180 ºC vorheizen. Muffinformen ausfetten oder mit Papierformen auslegen.
2) Eier, Zucker, Joghurt und Öl vermengen.
3) Mehl und Backpulver zügig einrühren. Geraspelte Karotten und gehackte Walnüsse unterrühren.
4) Teig in die Muffinformen füllen und in der Mitte des Backrohrs bei 180 ºC 25-30 Minuten backen.
5) Die Muffins aus dem Ofen nehmen und komplett auskühlen lassen.
6) Für die Glasur Zitronensaft und Staubzucker zu einer dickflüssigen Masse verrühren. Die Muffins damit glasieren und mit je einer Marzipankarotte dekorieren.
