Hello. I can’t believe it, but it has been a long time since the last post. I hope you had a great time while I was gone. I have quite a number of posts in the pipeline, but never had the time to finish them during the summer months. The reason? The usual stuff: First work, then travel. So stay tuned for the travel report as well as some (summer) recipes in the next weeks. Hereby, I am about to take my blog out of it’s summer slumber.

In order not to lose more time (I think two months are enough, right?), here comes a quick and easy recipe. I have been making this for a while. Depending on your mood or your personal preference, adjust the amount of lime, honey and tabasco for a touch of sour, sweet or hot.

Teriyaki marinaded salmon TERIYAKI MARINADED SALMON WITH MIXED VEGETABLES

Ingredients (2 servings):
2 pieces of salmon (200 g each)

Marinade:
Teriyaki sauce
Juice of 1/2-1 lime
1 tbsp honey
Tabasco (roughly 8 drops)

Vegetables:
2 medium carrots
1 bell pepper
1 small zucchini
Soy sauce

Preparation:
1) Mix the marinade ingredients in a bowl.
2) Marinade salmon filets for one hour.
3) Wash vegetables. Peel carrots. Cut carrots and zucchini in slices and bell pepper in cubes.
4) Heat two frying pans to medium heat. Take the salmon filets out of the marinade and put in one of the pans. Drizzle with some of the marinade. Fry salmon until thoroughly cooked (or still raw in the center, depending on liking).
5) In the meantime, fry the vegetables in the second pan. Start with the carrots and after a few minutes add zucchini and peppers. Season with some soy sauce.
6) Serve with rice or salad.

Teriyaki Lachs TERIYAKI-LACHS MIT GEMISCHTEM GEMÜSE

Zutaten (2 Personen):
2 Stück Lachs (je 200 g)

Marinade:
Teriyaki Sauce
Saft von 1/2-1 Limette
1 EL Honig
Tabasco (etwa 8 Tropfen)

Gemüse:
2 mittlere Karotten
1 Paprika
1 kleine Zucchini
Soja Sauce

Zubereitung:
1) Die Zutaten für die Marinade vermengen.
2) Die Lachsfilets eine Stunde marinieren.
3) Gemüse waschen. Karotten schälen. Karotten und Zucchini in Scheiben schneiden und den Paprika in Würfel.
4) Zwei Pfannen mittelheiss erhitzen. Die zwei Lachsfilets aus der Marinade nehmen und in eine der Pfannen geben. Den Lachs anbraten bis er durch ist (oder bis er in der Mitte noch leicht roh ist, je nach Vorliebe).
5) In der Zwischenzeit das Gemüse in der zweiten Pfanne anbraten. Zuerst die Karotten hineingeben und nach einigen Minuten die Zucchini und Paprika hinzugeben. Mit etwas Soja Sauce abschmecken.
6) Mit Reis oder Salat servieren.
