There is one disadvantage living in a land-locked country like Austria or Switzerland: Here is – obviously – no sea as far as you can see. Moving from Austria to Switzerland the mountains got higher, the lakes bigger but the wide sea did not come any closer.

The smell of the ocean, waves breaking at the harbour wall, fisherman unloading their day’s catch, sea gulls trying to get their share from the unloaded boxes of fish, the local market of a seaport town full of fresh fish – these are my vacation memories of seaport towns no matter if in the Mediterraenean or up in a Northern port village in Iceland or Norway.

During one of my travels I had a simple pulpo salad in a little restaurant. Tender pulpo pieces marinated in olive oil, garlic, lemon juice and some parsley added. So simple and yet so good – the perfect recipe to bring the Mediterranean into my home. Prepare the salad simply like this or add some celery stalks.

Pulpo salad PULPO SALAD

Ingredients:
1 kg pulpo (octopus), cleaned* (I used only legs)
3-4 celery stalks
60 ml lemon juice (about 1 lemon)
60 ml olive oil
2 garlic cloves, pressed
Salt, pepper
1-2 tbsp parsley, chopped

Preparation:
1) Bring a big pot of salt water to boil. Add cleaned pulpo and simmer for about 40 minutes.
3) Remove pulpo from water. Let cool. In the meantime slice celery stalks. Combine lemon juice, olive oil and garlic for the vinaigrette and add salt and pepper to taste. Cut pulpo in pieces.
4) Combine pulpo, celery stalks and parsley. Add vinaigrette and let marinate in the fridge for an hour.
5) Serve & enjoy.

Pulposalat PULPOSALAT

Zutaten:
1 kg Pulpo (Oktopus), gereinigt* (ich habe nur Beine verwendet)
3-4 Stangen Stangensellerie
60 ml Zitronensaft (etwa eine Zitrone)
60 ml Olivenöl
2 Knoblauchzehen, gepresst
Salz, Pfeffer
1-2 EL Petersilie, gehackt

Zubereitung:
1) Salzwasser in einem grossen Topf erhitzen, gereinigten Pulpo hineingeben und etwa 40 Minuten köcheln lassen bis er weichtgekocht ist.
2) Den Pulpo aus dem Wasser nehmen und auskühlen lassen. In der Zwischenzeit Selleriestangen in dünne Scheiben schneiden. Für das Dressing Zitronensaft, Olivenöl und Knoblauch vermengen und mit Salz und Pfeffer würzen. Pulpo in Stücke schneiden.
3) Pulpostücke, Sellerie und Petersilie vermengen, Dressing darüber geben und eine Stunde im Kühlschrank marinieren lassen.
4) Servieren & geniessen.
