Advent Calendar Day 11 – White chocolate truffles with coconut and lime

“Life is like a box of truffles. You never know what you get.” to freely quote Forrest Gump.

Today’s sweets are deceptive: they look like coconut balls but the first bite will reveal a white chocolate truffle with a nice hint of lime. Just beware, they turned out a bit soft which did not do any harm to the taste – especially if you are a white chocolate addict like me.

200 g white chocolate, chopped
60 ml cream
2 tbsp lime juice
zest of 1 lime
30 g grated coconut

1) Melt white chocolate together with cream in bain-marie, stir occasionally.
2) Stir in lime juice and lime zest.
3) Let cool for a few hours or overnight in the fridge.
4) Scoop small balls from the truffle mass with a melon scoop or two teaspoons. Roll truffles in coconut flakes.
5) Store in air tight container and keep refrigerated – should keep for approx. 1 week.

For a crunchier version: After forming the white chocolate-lime truffles dip them in additional 60 g of melted white chocolate before rolling them in coconut flakes.

200 g weisse Schokolade, gehackt
60 ml Schlagobers
2 Esslöffel Limettensaft
Schale einer Limette
30 g geraspelte Kokosnuss

1) Weisse Schokolade zusammen mit dem Schlagobers unter gelegentlichem Rühren über dem Wasserbad schmelzen.
2) Limettensaft und Limettenschale einrühren.
3) Die Masse für einige Stunden oder über Nacht im Kühlschrank abkühlen lassen.
4) Aus der Trüffel-Masse kleine Kugeln mit einem Melonenausstecher oder zwei Esslöffeln ausstechen. Trüffel in den Kokosraspeln wälzen.
5) Gekühlt und luftdicht verpackt ca. 1 Woche haltbar.

Für eine knackigere Alternative: 60 g zusätzliche weisser Schokolade schmelzen. Nach dem Formen der weissen Schokolade-Limetten Trüffel diese in die geschmolzene Schokolade tauchen und danach in den Kokosraspeln wälzen.
